Ingredients
Black Pepper1 pinch
Chili Oil2 tablespoons
Dried Soba Noodle100 - 150g
Fresh Coriander2 - 3 leaves
Garlic2 cloves
Light Soya Sauce3 - 4 tablespoons
Salt1 pinch
Sesame Oil1 tablespoon
Sichuan Pepper Oil (花椒油)1 tablespoon
Vinegar1 tablespoon

Cooking Instructions
Preparation:

1. Boil 100 - 150g of dried soba noodles

2. Once the noodles are cooked, rinse in cold water to cool and drain

3. Set the noodles on a plate


Make the dressing:

1. Finely chop up 2 cloves of garlic and a few coriander leaves into tiny pieces and place in a small bowl

2. Add 3 - 4 tablespoons of light soya sauce, 1 tablespoon of vinegar, 1 teaspoon of sesame oil, 1 teaspoon of sichuan pepper oil and a pinch of black pepper to the bowl and mix well


To serve:

1. Drizzle dressing over soba

2. Drizzle 2 tablespoons of chili oil over soba

3. Garnish with some boiled spinach or fresh coriander and serve
