This dessert is sooooooooooo sweet and yummy. You won't be able to stop.
| Coconut Milk | 3 - 4 tablespoons |
| Grated Ginger | 1/4 teaspoon |
| Lime Zest | 1/2 |
| Lime | 1/2 |
| Mango | 250g |
| Pineapple | 200g |
| Syrup | 1.5 cups |
Preparation:
1. Add 1/4 teaspoonful of grated ginger to a large bowl and mix it with lime zest from half a lime
2. Add 1.5 cup of fruit syrup (if using canned fruit). If using fresh fruit, make syrup using 1 cup of water and 1 cup of sugar, boil until sugar dissolves, remove from heat and let cool.
3. Add coconut milk to the syrup mixture and blend.
4. Add mango and pineapple chunks into a blender and puree.
5. Add fruit puree to syrup and mix thoroughly.
6. Place into freezer. After 1 hour, remove from freezer and stir gently to break up ice crystals and return to freezer for another hour.
7. Repeat 2 more times and leave in the freezer until thoroughly frozen.
8. Remove from freezer and set aside for a few minutes to defrost slightly then serve.
